Seedless, seeded and yellow watermelon

USDA's record is for raw watermelon flesh. It reports lycopene, the red pigment, so it describes the familiar red-fleshed melon, seeded or seedless. Yellow and orange watermelons get their color from different pigments and have no lycopene to speak of, but they are used the same way.

Most watermelons sold in the US today are seedless. They are bred to produce sterile seeds, so the soft white "seeds" you see are empty seed coats that are eaten along with the flesh. The rind is edible too, though it is firm and bland, and it is not part of this record.

How watermelon is used

  • Fresh: wedges, cubes and balls, or in fruit salads with mint and lime.
  • Savory salads: cubed with feta, red onion, cucumber and olive oil.
  • Drinks: blended and strained into juice and agua fresca, or frozen into ice pops and granita.
  • Rind: the white part of the rind is pickled in a sweet brine, a Southern US tradition, and also used in stir-fries.

Foods made with watermelon

  • Watermelon feta salad. Cubed watermelon, crumbled cheese, mint, onion and olive oil. Goat Cheese · Onion · Olive Oil · Cucumber
  • Agua fresca. Watermelon blended with water and lime, often sweetened with a little sugar. Sugar
  • Fruit salad. Watermelon with berries, grapes and pineapple. Blueberries · Strawberry · Grapes · Pineapple
  • Pickled watermelon rind. Peeled rind simmered in vinegar, sugar and spices, so its nutrition is mostly the added sugar. Sugar

Choosing and storing a watermelon

A ripe watermelon feels heavy for its size and has a creamy yellow patch where it rested on the ground; a white or pale green patch suggests it was picked early. Watermelon does not ripen further once picked. Keep whole melons at room temperature for a few days or in the refrigerator, and refrigerate cut watermelon covered.

Labeling watermelon products

For fruit cups, juices and salads, weigh the trimmed watermelon flesh without rind and enter it in the label generator. The rind is a large share of a whole melon, so a melon's purchase weight overstates what goes into the product. For juice, enter the weight of the strained juice and any added sugar. Look up the serving size for fresh-cut fruit or juice in the RACC lookup.

Watermelon nutrition label for Canada, the EU and the UK

The same serving of watermelon, drawn by the label formats other markets require: the Canadian bilingual Nutrition Facts table, the EU nutrition declaration (per 100 g, energy in kJ and kcal, salt instead of sodium) and the UK nutrition information table with reference intakes. The generator switches between these and many more from one recipe.

Frequently asked questions about watermelon

How many calories are in a slice of watermelon?
USDA's wedge, about one sixteenth of a melon, weighs 286 g without the rind and has 86 calories and 17.7 g of sugars. Slices cut at home vary, so weigh the flesh for an exact number.
How many calories are in a whole watermelon?
USDA lists a whole melon, about 15 inches long, at 4,518 g, with 1355 calories. That is the edible flesh of a large melon, so smaller seedless melons come in well under it.
How much of a watermelon is water?
Water is 91.5 g of every 100 g of watermelon flesh. A cup of diced watermelon holds 139 g of water, and the rest is mostly natural sugars.
Watermelon vs mango: which has fewer calories?
Watermelon has about half the calories of mango per gram and less sugar. Mango has several times more vitamin C and more fiber.
Does watermelon have any nutritional value?
Yes. A cup has 12 mg of vitamin C (14% DV) and 170 mg of potassium, along with vitamin A from its carotenoids. Vitamin C is the only nutrient that reaches the FDA good source level in a cup.
What is a serving of watermelon?
This page defaults to 1 cup, diced (152 g), a USDA household measure. The serving size on a packaged food label is set by the FDA reference amount (RACC) for its category, so a product label can use a different amount. The selector above shows every USDA measure for watermelon.
Can I use watermelon in a Nutrition Facts label calculation?
Yes. Open the generator with watermelon added, enter the weight you use, add your other ingredients and the label is calculated from the same USDA record shown here. A label for a product you sell must reflect your actual recipe and finished serving.

Source and method

Nutrient values are from USDA FoodData Central, SR Legacy (April 2018 release, public domain), record 167765: "Watermelon, raw". Values are stored per 100 g exactly as USDA reports them and scaled to each serving by weight. The Nutrition Facts panel applies the FDA rounding rules in 21 CFR 101.9; tables and text show the scaled amounts at reading precision, so a figure can differ slightly from the panel. A nutrient USDA does not report for this food is shown as not reported, never as a guessed value.

SR Legacy predates the added sugars field. This is a whole or unsweetened food, so added sugars are shown as 0 g. View the USDA record ↗
