* Percent Daily Values are based on a 2,000 calorie diet (FDA reference values for adults and children 4 years and older). Per-100 g values are USDA figures before label rounding.
Every serving below is a USDA household measure for this food, a fraction of one, or a unit conversion. Amounts are USDA values scaled by weight; only the Nutrition Facts panel applies the coarser FDA label rounding.

Most cucumbers in US stores fall into a few groups:
USDA has no separate records for these types, so this page uses one record for all of them: raw cucumber with the peel. Because the types differ most in size, weighing the cucumber you use matters more than which type it is.
USDA analyzed peeled cucumber separately. Per 100 g, peeled cucumber has fewer calories and less than half the vitamin K of cucumber with the peel, so the dark skin carries much of the vitamin K. The numbers on this page are for unpeeled cucumber. If you peel a waxed slicing cucumber, as many cooks do, weigh it after peeling.
Pickling changes the numbers more than peeling does. A dill pickle soaks up salt from the brine, and USDA's dill pickle record has far more sodium than fresh cucumber's 2 mg per 100 g.
Grate a cucumber, squeeze out the liquid, then mix it with Greek yogurt, minced garlic and a spoon of olive oil. Serve with raw vegetables.

For a salad, dip or sandwich, weigh the cucumber as it goes into the product: peeled or unpeeled, and after seeding or squeezing if your recipe does that, since squeezed cucumber has lost water. Enter that weight with your other ingredients in the label generator. Pickles are harder: the cucumber absorbs part of the brine's salt and the rest is drained away, so a calculation from ingredients is only an estimate of sodium, and many pickle makers send finished product for lab analysis. The FDA reference amount for your product category is in the RACC lookup.
The same serving of cucumber, drawn by the label formats other markets require: the Canadian bilingual Nutrition Facts table, the EU nutrition declaration (per 100 g, energy in kJ and kcal, salt instead of sodium) and the UK nutrition information table with reference intakes. The generator switches between these and many more from one recipe.

Nutrient values are from USDA FoodData Central, SR Legacy (April 2018 release, public domain), record 168409: "Cucumber, with peel, raw". Values are stored per 100 g exactly as USDA reports them and scaled to each serving by weight. The Nutrition Facts panel applies the FDA rounding rules in 21 CFR 101.9; tables and text show the scaled amounts at reading precision, so a figure can differ slightly from the panel. A nutrient USDA does not report for this food is shown as not reported, never as a guessed value.
SR Legacy predates the added sugars field. This is a whole or unsweetened food, so added sugars are shown as 0 g. View the USDA record ↗
