How to Calculate % Daily Value on a Nutrition Label
The formula is simple; the details are not. Order of operations, the two rounding ladders, which nutrients get no %DV, and a full worked panel from raw values.
Every percent Daily Value on a Nutrition Facts panel comes out of one division: the amount of the nutrient in one serving, divided by that nutrient's Daily Value, times 100. Learning how to calculate percent Daily Value takes ten seconds. The rest of this article is about the details that decide whether your answer is the same one an FDA reviewer would get. This is written for anyone who has to produce a compliant panel from a recipe and a lab report, and it covers the order of operations, which amount you are allowed to divide, the two separate rounding ladders, and the nutrients that get no percentage at all.

How to calculate percent Daily Value: the formula and the order you apply it in
The %DV formula is (amount per serving divided by the Daily Value) times 100. What trips people up is that this is the last step, not the first. A percentage is only as good as the per-serving amount you feed it, and the per-serving amount has to be built in a specific order.
- Roll the whole recipe up at full precision. Sum every ingredient's contribution for each nutrient across the entire batch, carrying all the decimal places your ingredient data gives you.
- Divide the batch total by the number of servings the batch yields. Still at full precision.
- Now you have an unrounded amount per serving. This is the number the rest of the label is built from.
- Round that amount for declaration using the nutrient's own rounding rule.
- Calculate the percentage and round it using the correct ladder for that nutrient.
The rule that saves the most trouble is the one about not rounding early. Never round each ingredient's contribution before you sum them. Rounding is a label formatting step, not a calculation step, and applying it inside the roll-up compounds error across every ingredient in the formula.
Here is what that looks like. A batch of 80 granola bars gets its added sugars from three ingredients: honey contributing 311.98 g across the batch, cane sugar 139.86 g, and chocolate chips 44.16 g. Sum first: 496.00 g, divided by 80 bars, is 6.2 g per bar, which declares as 6 g and gives 6.2 divided by 50 equals 12.4 percent, declared as 12% DV.
The wrong path is to work out each ingredient's per-bar contribution and round those. Honey is 3.90 g per bar, cane sugar is 1.748 g, chips are 0.552 g. Round each to the whole gram the label uses and you get 4 plus 2 plus 1, which is 7 g per bar and 14% DV. One extra gram and two extra percentage points, entirely manufactured by rounding in the wrong place.
Which amount you divide: the rounded declared value or the unrounded one
This is the question that produces the most disagreement between two people calculating the same panel, and the answer is that both of them can be right. Under 21 CFR 101.9(d)(7)(ii) the percent Daily Value for the DRV nutrients may be computed either from the rounded declared amount or from the unrounded analytical amount. FDA permits either. You just have to be consistent and be able to show your work.
Most of the time the two routes agree. At boundaries they do not, and the gap is always one or two percentage points. Two rows from the worked panel below show it clearly.

The direction goes either way. Total fat rounds down for declaration, so the declared-amount route gives the smaller percentage; saturated fat rounds up to the nearest 0.5 g because it is below 5 g, so that route gives the larger percentage. Pick one method, write it into your specification, and use it everywhere. Mixing methods row by row to make numbers look better will not survive a records request.
The two rounding ladders
There is not one rounding rule for percentages. There are two, and which one applies depends on whether the nutrient has a DRV or an RDI. The macronutrients and other food components in 101.9(c)(9), meaning total fat, saturated fat, cholesterol, total carbohydrate, sodium, dietary fiber, protein and added sugars, round to the nearest whole percent. The vitamins and minerals in 101.9(c)(8)(iv) use a stepped ladder set out in 101.9(c)(8)(iii).

The below-2-percent case has three permitted treatments and you choose among them. You may declare the nutrient as 0. You may use an asterisk next to the nutrient name pointing to the statement "Contains less than 2 percent of the Daily Value of this (these) nutrient(s)." For vitamin D, calcium, iron and potassium specifically, you may instead use a "Not a significant source of ..." statement naming the nutrients. All three are compliant. Which one you want usually depends on how much vertical space the panel has left.
One consequence of the mineral ladder is worth internalising: anything from just above 10 percent up to 12.5 percent lands back on 10 percent, because 10 and 15 are the only rungs available and the lower one is closer. That single step causes most of the discrepancies between a spreadsheet and a printed panel.
A full worked panel, every percentage from raw values
Here is one product taken end to end. It is a 45 g oat and almond granola bar sold to the general population, so the adults and children 4 and older column applies. The analytical amounts are the unrounded per-serving values after the batch roll-up described above, and every Daily Value calculation in the table starts from those unrounded values.

Read the last two columns against each other and the two ladders are visible side by side. Total fat at 10.79 percent declares as 11 percent, because whole-percent rounding applies. Iron at 10.56 percent declares as 10 percent, because it is a mineral, it is above 10 percent, and the only rungs available are 10 and 15. Two nutrients within a quarter of a percentage point of each other, and the declared values differ by one point in opposite directions. Magnesium is the same effect further up the ladder: 16.67 percent declares as 15 percent, two points below where whole-percent rounding would have put it.
Calcium and potassium show the low end: both round to the nearest 2 percent increment, so 4.77 becomes 4 where whole-percent rounding would have given 5. The gram and milligram amounts for vitamin D, calcium, iron and potassium must also be declared, a change introduced by the 2016 rule; their amount rounding sits in 101.9(c)(8) rather than in the percentage rules covered here.
Nutrients with no percentage, and the one that is conditional
Two mandatory lines carry no percent Daily Value, for the same reason: no Daily Value has been established. Trans fat has none. Total sugars has none. Declare the grams and leave the %DV column blank on those rows. This confuses people because added sugars, indented directly under total sugars, does have a DV of 50 g and does carry a percentage. A panel showing a percentage next to total sugars is wrong on its face.
Protein is the conditional one. For adults and children 4 and older, the protein %DV is not required. You declare protein in grams and leave the percentage off, which is what the granola bar above does. The percentage becomes mandatory in two situations. The first is when you make a protein claim, and in that case the percentage must be corrected for protein quality using PDCAAS, the Protein Digestibility Corrected Amino Acid Score, so it is not a plain division by 50 g. The second is when the food is intended for infants or children under 4, where the protein %DV is required regardless of claims. If you are declaring protein %DV, you need the PDCAAS value for your specific formula from your lab, not a textbook figure for a single ingredient.
Calories carry no percent Daily Value either. The 2,000 calorie reference appears in the footnote, not on the calories line.
Choosing the right population column
The Daily Values in 101.9(c)(9) and 101.9(c)(8)(iv) are published in four columns: adults and children 4 and older, infants through 12 months, children 1 through 3, and pregnant and lactating women. Your product's marketing determines which set you divide by, and using the wrong column makes every percentage on the panel wrong at once.
A snack bar marketed to everyone uses the adults and children 4 and older column, based on a 2,000 calorie reference: total fat 78 g, saturated fat 20 g, sodium 2,300 mg, total carbohydrate 275 g, dietary fiber 28 g, added sugars 50 g, calcium 1,300 mg, iron 18 mg, potassium 4,700 mg, vitamin D 20 mcg.
The same bar marketed for children 1 through 3 uses a 1,000 calorie reference: total fat 39 g, saturated fat 10 g, sodium 1,500 mg, total carbohydrate 150 g, dietary fiber 14 g, added sugars 25 g, protein 13 g, calcium 700 mg, iron 7 mg, potassium 3,000 mg, vitamin D 15 mcg. Several are roughly half the adult value, so the wrong column can put a percentage out by a factor of two. That label also uses the 1,000 calorie footnote, and protein %DV is required.
Infant labels through 12 months are more restrictive again. Under 101.9(j)(5) they show no %DV at all for saturated fat, trans fat, cholesterol, sodium, dietary fiber, total sugars or added sugars, and they carry no footnote.
The mistakes that produce wrong percentages
- Rounding ingredient by ingredient. The single most common source of error. Roll the batch up at full precision, divide by servings, and round once at the end.
- Applying whole-percent rounding to vitamins and minerals. If your spreadsheet uses one rounding formula for the whole column, every micronutrient on the panel is at risk. The two ladders are separate.
- Putting a percentage next to total sugars or trans fat. No Daily Value exists for either, so no percentage can be calculated.
- Declaring protein %DV without a claim. It is not required for adults and children 4 and older, and if you do declare it because you made a claim, it has to be PDCAAS corrected.
- Switching between rounded and unrounded inputs row by row. Both are permitted. Choosing whichever gives the friendlier number on each row is not.
- Using the adult column on a toddler product. Check the marketing before you check the maths.
- Treating 5 percent and 20 percent as rounding boundaries. They are consumer guidance for reading a label, not calculation rules. See the 5 and 20 percent rule for what they actually mean.

Frequently asked questions
Can I calculate %DV from the rounded label value?
Yes. 21 CFR 101.9(d)(7)(ii) allows the percent Daily Value for DRV nutrients to be computed from either the rounded declared amount or the unrounded analytical amount. Decide once, document the choice in your labeling specification, and apply it to every product. Auditors care that your method is consistent and reproducible, not which permitted method you picked.
Why does my calcium percentage come out even when the maths gives an odd number?
Because calcium is a mineral and minerals at or below 10 percent round to the nearest 2 percent increment under 101.9(c)(8)(iii). Only even values are available in that band, so 4.77 percent and 5.2 percent both land on 4 percent and 6 percent respectively. It is not a bug in your calculator, it is the ladder.
What do I do when a vitamin comes out below 2 percent?
Declaration is not required at that level. You have three options: show 0, use an asterisk pointing to "Contains less than 2 percent of the Daily Value of this (these) nutrient(s)," or, for vitamin D, calcium, iron and potassium only, use a "Not a significant source of ..." statement naming the relevant nutrients. All three are compliant, so choose on the basis of panel space.
Does total sugars really get no percentage?
Correct. No Daily Value has been established for total sugars, so the %DV column is blank on that row. The 50 g Daily Value applies only to added sugars, which is declared on its own indented line as "Includes X g Added Sugars" with its own percentage. Trans fat is the same situation: grams only, no percentage.
If my product is sold to both adults and toddlers, which column wins?
The column follows how the food is marketed, not who might eat it. A product marketed to the general population uses the adults and children 4 and older values even if children eat it. A product marketed for children 1 through 3 uses that column and its 1,000 calorie footnote. Marketing the same item both ways means two labels, not one compromise label.
