Учтены исключения для малых упаковок

Печенье в индивидуальной упаковке площадью менее 12 кв. дюймов подпадает под § 101.9(j)(13). NFL автоматически выбирает табличный или линейный формат, когда это уместно.

Wheat, and the other eight

Wheat is one of the nine major food allergens, which means it is in essentially every product you make. Milk, eggs, and tree nuts cover most of the rest of a bakery's range, and sesame joined the list under the FASTER Act - a change that caught a lot of bakeries out, because sesame appears on far more bread and bun products than people expect.

NFL bolds the allergen inside the ingredient statement and generates the "Contains:" line from the ingredients themselves, so adding sesame seeds to a topping updates the allergen declaration without you remembering to go back and edit it.

The same recipe that produces the label produces the costing. Track cost per baker's dozen, per loaf, or per cookie, set a target margin, and back-calculate the wholesale and retail price. Ingredient price changes flow through to every product that uses them, which matters when flour or butter moves and you need to know which lines stopped being profitable.

Bakery nutrition labels: common questions

I only sell at farmers markets. Am I exempt?
Possibly, under the small-business provisions, but not under the retail-establishment one - a market stall is generally not the establishment where the food was made. Check whether you fall under § 101.9(j)(18) and whether you have filed Form 3570.
I sell wholesale to one local café. Does that change things?
Yes. Wholesale product is packaged food moving in commerce, and the retail-establishment provision no longer covers it.
Do I need a label on an unpackaged loaf?
Nutrition labeling attaches to packaged food. Loose bread sold from a basket in your own shop sits outside it - though allergen information may still be expected of you by state or local rules, and by customers.
Does "artisan" or "handmade" count as a claim?
No. Those are not nutrient content or health claims. "Whole grain," "high fiber," and "low sugar" are.
