Allergen information in UK food businesses
The 14 allergens
UK food law names 14 allergens that must be declared: celery, cereals containing gluten (wheat, rye, barley, oats), crustaceans, eggs, fish, lupin, milk, molluscs, mustard, tree nuts, peanuts, sesame, soya, and sulphur dioxide or sulphites above 10 mg/kg or 10 mg/L.
Restaurants and cafes must be able to tell customers
For food sold loose, such as dishes in a restaurant or cafe, allergen information must be available to the customer, in writing or orally. Many businesses keep a chart like this one so every member of staff gives the same answer, and display a notice asking customers to ask.
A chart is only as good as the recipes behind it
Ticks here come from matching ingredient names, so read each row against the recipe and your suppliers' specifications, and update the chart whenever a recipe or supplier changes. "May contain" notes describe cross-contact in your kitchen; they cannot be worked out from an ingredient list.
