Label consulting is a different service line from clinical work

RDs who move into food-business consulting usually underprice the first few engagements, because they price it like nutrition analysis when the client is actually buying regulatory risk reduction.

What the brand owner needs is not a nutrient breakdown. It is a defensible panel: correct serving size derived from the RACC table rather than chosen for marketing reasons, correct § 101.9 rounding, an ingredient statement in true descending predominance, a complete allergen declaration, and claim language that will not void an exemption or attract a letter. That is a compliance deliverable, and it prices accordingly.

Moving the arithmetic into software does not devalue the work. It relocates your billable time from spreadsheet mechanics to the judgement calls the client cannot make themselves - which is the part they were actually paying for.

What the FDA means by a reasonable basis

Clients ask whether they need lab analysis. Usually not. The FDA accepts nutrient values derived from a validated database, and USDA FoodData Central is the standard reference - which is what NFL computes from.

The judgement your client is paying for sits in the mapping. Which FoodData entry actually represents their ingredient? Raw or cooked? Which cultivar, which fat content, which brand-equivalent? Does the yield factor account for moisture loss in baking? Those choices determine whether the resulting panel is defensible, and they are invisible to someone without nutrition training.

Lab analysis earns its cost when a claim depends on a specific threshold - "good source of fiber," "low sodium" - or when a retailer or export market demands a certificate of analysis.

The mistakes you will find in client labels

  • Serving size picked to make the calorie number look better, rather than derived from the § 101.12 RACC table for that product category
  • Ingredient statement in recipe order or alphabetical order instead of descending predominance by weight
  • Sub-ingredients omitted - the enriched flour or the chocolate declared as a single item with no parenthetical
  • A nutrient content claim on the pack that silently voided the small-business exemption the client was relying on
  • Sesame missing from the allergen declaration, which the FASTER Act added as the ninth major allergen
  • Rounding done to ordinary significant figures rather than the § 101.9 increment rules, which have different thresholds per nutrient

Who carries the responsibility

Worth being explicit with clients in writing: the brand owner is generally the regulatory owner of the product and its claims. You are providing professional analysis and recommendations; they are the party placing the food into commerce.

That framing protects you and clarifies the engagement. It also tends to make clients take the review seriously, because it locates the consequence with them. Sending the saved recipe URL for sign-off before export creates a clean record of what was approved and when.

Label consulting for nutritionists: common questions

Can I white-label the output for my practice?
The exported label is your client's asset. Panels are drawn to the FDA specimens, so there is no NFL branding on the label itself.
How do I hand off at the end of an engagement?
Export the recipe as JSON. The client can load it into their own account and continue, or pass it to whoever takes over.
Do I need to be an RD to do this work?
No credential is legally required to prepare a food label. Whether a client should hire someone without nutrition training is a different question, and the answer shows up in the mapping errors above.
