米国は主要アレルゲンを9品目、EUは14品目、日本は28品目、韓国は22品目と定めています。NFLは管轄ごとに、すべての原材料をアレルゲンプロファイルへ対応付けます。
米国の9アレルゲン(FALCPA + FASTER Act 2023)
乳、卵、魚、甲殻類、木の実、落花生、小麦、大豆、ごま - FASTER Actにより2023年1月からごまが追加されました。原材料表示内での強調表示と「Contains:」表示、いずれの表示方法にも対応しています。

交差接触に関する「May contain」表示
予防的アレルゲン表示は任意ですが、事実に基づくものでなければなりません。製造施設での交差接触リスクについて「may contain」行を追加できます。FDAのガイダンスに沿って、原材料表示に隣接する独立した段落として描画されます。
原材料からの自動検出
FoodData Centralから「wheat flour」を選ぶと、小麦のアレルゲン欄が自動でチェックされます。「soy lecithin」を追加すれば大豆が自動チェック。精製油や加水分解物などの例外ケースに備え、手動での上書きも常に可能です。
Cross-contact and advisory statements
Precautionary allergen labelling ("May contain tree nuts", "Made in a facility that also processes peanuts") is voluntary in the US but must be truthful and not a substitute for good manufacturing practice. NFL gives advisory statements their own field, rendered as a separate line adjacent to the ingredient statement and "Contains:" declaration, matching FDA guidance on placement.
Keeping advisories structurally separate from the mandatory declaration matters: reviewers and retailers increasingly check that the two are not blurred together, and a clean separation makes your label easier to audit. Because allergens are the #1 recall trigger
Undeclared allergens are consistently the leading cause of US food recalls, usually not because a company did not know its formula, but because a label and a formula fell out of sync somewhere between reformulation and print.
